Very quick and easy. Only had brown miso paste so think I’d cut the amount in half next time if using it. It was perfect for a fast dinner when I was already hungry and had no idea what to fix. Lots of umami from the mushrooms & miso. I cut the sesame oil down to lower fat content.

This has so far been one of our favorites! Making it a second time tonight! Love it
Talisa – Feb. 10, 2022, 8:29 a.m.
This was quick and simple, yet delicious! And that dressing — sooo good! I saw the note about the rice vinegar so I skipped it, and the dressing turned out so yummy I nearly licked the bowl! I’ll definitely make this again
PUL Team – Feb. 11, 2022, 12:18 a.m.
Beyond happy that the recipe was enjoyed, Talisa, it means so much 😃

Cécile Jay – Feb. 6, 2022, 1:23 p.m.
It was creamy but i didn’t liked the vinegar. I will try again without it.
PUL Team – Feb. 6, 2022, 9:14 p.m.
Hey Cécile! Thanks for sharing your experience with this one. It’s really appreciated to help us improve. This one indeed has a distinct vinegar taste. If desired, we’d recommend omitting or adding less vinegar 😊
Cécile Jay – Feb. 7, 2022, 9:48 a.m.
Next time i will read untel the end of the receipe. Cause you wrote it at the end. I don’t give up. I work on my english too. Thanks for all your share.

Roksana – Feb. 2, 2022, 4:19 p.m.
It was delish! I subbed tahini for some pb, because it was what I had at hand, shiitake for regular mushrooms and edamame for frozen peas and it still tasted amazing! 🥰
PUL Team – Feb. 3, 2022, 4:54 a.m.
Mmm love the modifications, Roksana, sounds delicious 😍

OMG! This was SO delicious! We used tamari and pad thai rice noodles to avoid gluten, which worked perfectly! It was vinegar-y, but not too strong for us. And super quick to whip up. SO GOOD!
PUL Team – Feb. 2, 2022, 8:01 a.m.
Mmm sounds delightful, Kristen, thank you!

I love recipes like this that make healthy eating feel so manageable!
All the grocery stores near me were out of soba noodles for whatever reason, but I still had all the other ingredients, so I tried this recipe both with rice noodles and with whole wheat noodles that I had on hand. It was still really good, but I’m excited to try the real deal once soba noodles are back in stock at my area.
The vinegar was a little much for me the first time I tried it. But on my third day of leftovers, my palette had gotten used to its strong taste, and I fully enjoyed it.
PUL Team – Feb. 2, 2022, 7:40 a.m.
Thanks a bunch for sharing your experience with this one, Bridgette! This one indeed has a stronger vinegar taste which we enjoy too 😃
Pauline – Feb. 1, 2022, 11:33 a.m.
Hi! I was wondering if one could use soaked dried shiitake for this recipe? Please let me know if someone has tried that!
PUL Team – Feb. 2, 2022, 7:24 a.m.
Hi Pauline! You can used re-hydrated dried mushrooms if desired. They expand after soaking so using less to start may be preferred. They also do tend to have an earthier taste and different texture than fresh just in case you haven’t experimented with them before 😊
Annika – Feb. 1, 2022, 3:43 a.m.
Ugh this recipe is AMAZING. I loooove how vinegary it is. I’m also gluten intolerant so I used Seaport Farms Edamame noodles instead and they worked great. As a college student, quick meals like these are so helpful to make on a busy weeknight. This is definitely going to be a go to recipe for me this semester (:
PUL Team – Feb. 1, 2022, 4:13 a.m.
It means soo much that the recipe was enjoyed, Annika, thank you for the insight! All the best with your studies 🌻
Tre – Jan. 31, 2022, 5:11 a.m.
Fantastic recipe and great to riff off. I made it with spinach and peanut butter instead of tahini because that’s what I had.
PUL Team – Jan. 31, 2022, 7:16 p.m.

Tash – Jan. 26, 2022, 9:32 a.m.
Do you think this would do well eaten cold the next day?
PUL Team – Jan. 27, 2022, 6:55 p.m.
Hey Tash! This one serves well hot or cold in our experience☺️
Rebekah – Jan. 25, 2022, 5:03 p.m.
Loved this recipe! The flavors were SO good. I did have to sub in natural peanut butter as we were out of tahini, but it worked out pretty well. The husband wasn’t too keen on the vinegar zing or the mushrooms, but the kiddo fully approved of everything. Paired this alongside baked marinated tofu and it was a very satisfying meal. More 20 minute meals please!
PUL Team – Jan. 27, 2022, 2:36 a.m.
Oh, Rebekah, thanks a bunch for sharing your experience with it! We’re so thrilled it was enjoyed and have noted down the suggestion. The vinegar taste isn’t for everyone, although you could add less if desired 😊
Caroline – Jan. 25, 2022, 1:05 a.m.
I was so excited to see that you guys uploaded a 20 minute meal video yesterday, and then was even MORE excited when I realized I had all of the ingredients for this! Only 20 minutes for a delicious and easy meal, this will definitely be a repeat dinner in my house 🙂
